COCONUT ICED MOCHA

Ingredients:

  • 5 oz cold brewed coffee
  • ½ cup coconut milk (lite, full-fat, or refrigerated)
  • 3 tbsp chocolate syrup
  • 1 tsp vanilla extract
  • 1 tsp sugar
  • 2 tbsp toasted coconut
  • 1 can cold full-fat coconut milk
  • 2 tbsp sugar

Instructions:

  1. Brew coffee and let it cool.
  2. In a bowl, combine cold coconut milk and sugar. Beat until peaks form and the consistency resembles whipped cream, about 6 minutes.
  3. Fill the bottom of a glass with 1–2 tablespoons of chocolate syrup, then add ice cubes.
  4. Pour in the cooled coffee, followed by the coconut milk, vanilla extract, and sugar. Mix well.
  5. Top with 1–2 tablespoons of whipped coconut cream and an additional tablespoon or two of chocolate syrup.
  6. Garnish with toasted coconut.
  7. Serve immediately and enjoy!
