COCONUT ICED MOCHA
Ingredients:
- 5 oz cold brewed coffee
- ½ cup coconut milk (lite, full-fat, or refrigerated)
- 3 tbsp chocolate syrup
- 1 tsp vanilla extract
- 1 tsp sugar
- 2 tbsp toasted coconut
- 1 can cold full-fat coconut milk
- 2 tbsp sugar
Instructions:
- Brew coffee and let it cool.
- In a bowl, combine cold coconut milk and sugar. Beat until peaks form and the consistency resembles whipped cream, about 6 minutes.
- Fill the bottom of a glass with 1–2 tablespoons of chocolate syrup, then add ice cubes.
- Pour in the cooled coffee, followed by the coconut milk, vanilla extract, and sugar. Mix well.
- Top with 1–2 tablespoons of whipped coconut cream and an additional tablespoon or two of chocolate syrup.
- Garnish with toasted coconut.
- Serve immediately and enjoy!
